Yam Neua for birthday gurl

It’s my friend chef babyrambutan’s birthday tomorrow and I’d like to dedicate to her this salad, since she likes spicy food …

“we’re thousand miles apart and I couldn’t come to bear you gifts, I thought of making you a spicy salad instead”

Yam Neua or thai spicy beef salad.

1 lb cut beef tenderloin
1/2 teaspoon fresh ground black pepper
3-5 tbsp fresh lime juice
2 tbsp fish sauce
1/2 teaspoon sugar
2-3 chopped Thai red or green chili peppers
slices fresh tomatoes, seeds removed
slices shallots
slices of different leafy vegies of your choice

the 3 below can be added as extras:

1/2 cup chopped fresh coriander leaves
2 tbsp chopped fresh mint leaves
slices of cucumber, seeds removed (most of the times, this is used to adorn the plate)

-Coat both sides of the beef with pepper and grill for few minutes on each side, then let it slightly cool for a minute or 2 {I prefer my beef still warm when served.} In a large bowl stir together lime juice, fish sauce, sugar, and chilies until combined, but you might want to be easy on the sugar that you taste it while adding it, some people don’t want it too ’sweet’. Then add the rest of the ingredients and slightly toss them. Arrange the salad on a plate placing beef cuts on top.

note: just adjust the ingredients like chillis if you prefer it really hot. Just because it’s a salad, it doesn’t mean that you can not serve it as main meal. This recipe goes well with thai fragrant rice.
