Thai CUCUMBER SALAD

Cucumber salad

One of the easiest and tastiest salad I’ve ever encountered. With it’s refreshing cucumberic ( is there such a word? ) taste, this easily goes well with fried or barbequed dishes and yes, even with this omelette (Feb. 1 post.)

Fresh medium cucumber- peeled or not, cut in half-legthwise, remove the seeds by scooping it with a teaspoon, then slice thinly. Mix white vinegar of about 4tbsp and 2-3 tbsp crystal sugar. Allow the sugar to melt, set aside.
Slice 2 small shallots, mildy crushed unsalted roasted peanuts, fresh coriander leaves and sweet chilli sauce , mix them all with the cucumber. Then slowly add the vinegar mix, keep tasting it while doing this. I actually do not have rules when making this salad, I just keep on adjusting the ingredients until I’m satisfied. And must be served immediately (otherwise, vinegar will cook the cucumber resulting to sogginess.)

note: you can also use chopped red chillies instead of sweet chilli sauce.

    hmmm this one looks yummy and easy to do even for me. btw i just love salad thanks for this…now the only question is when i’ll be able to find the time and energy to do it. i’ve been swamped with work this past few days that all i can do is pick up the phone and call food delivery service.

    Oh yah, this is one of our favorites too, especially with fried foods. A very good substitute for atsara. It actually pairs well with anything rich and heavy, since it’s so refreshing.

    er, thess, pwede ba yung sambal oelek ang gamitin instead of chili? kasi naman tig-250 grams na sili yung binebenta dito sa asian store. aanhin ko naman yun?!

    RUTHIE: yung sambal oelek kasi may bawang at preservatives..so magiiba lasa ng salad mo…pwede mo pa gamitin ang fresh chilli, tadtarin mo lang ng pino, iluto mo sa sugar at tubig..i-jar mo, presto! may sweet chilli sauce ka lagi ;)
