Roasted white fish wrapped in bacon with lemon mayonnaise sauce

Once again I consulted COOK with Jamie: My Guide to Making You a Better Cook to find a simple fish meal. I wanted my husband and father in law to try something else than their favorite beef or pork meal. In Jamie’s book I found on page 222 the perfect fish meal for us. The verdict: husband and dad in law loved it, so did I. It was the first time to make it but certainly will not be the last.

The recipe calls for asparagus but since it wasn’t the season yet and I didn’t want to get those available ones which are quite tough, I chose to use beans instead. It worked well I must honestly say. I have used filleted monkfish which was just perfect as it was able to carry the stronger taste of bacon wrap and of the rosemary too. Really a good combination because I was able to taste the fish. The lemon mayonnaise sauce was absolutely brilliant!

On the initial stage, just after fish were pan fried to brown, arranged in a dish and about to be placed in the oven for few minutes roasting…

A fantastic light meal with balance taste of fish and bacon with the lemon-mayo sauce on the side that makes it listed as a favorite of my family.

    That sounds delicious!!! I love wrapping fish in bacon…did that once with two fillets stuffed with spicy caramelized onions…it was yummy :)
