quick springtime pasta

Weeks ago, while waiting to board my plane at Heathrow Airport, I’ve decided to buy some magazines, one of them was the BBC Good Food.

My husband who loves pasta has one day asked me to make some but I didn’t want to use his usual meatballs ingredients, I wanted a no-meat pasta. So I flipped and flipped pages of the magazine when this spaghetti recipe with artichoke caught my attention. So off me went to the grocery, found my ingredients and true to its promise, it was rather tasty and easy to make recipe. And what made me extra happy was that my meatballs-in-spaghetti-lover-husband also liked it sans his meatballs.

Quick Springtime Pasta

you might say this is a lazy entry because I only copied/pasted from this link what was written below. But hey, that’s exactly what I used (well almost, I did not use parsley.) And if you haven’t tried artichoke for pasta before, might as well make ‘em now! ;)


Ingredients

* 1 tbsp olive oil
* 1 garlic clove, crushed
* 400g can tomatoes
* handful basil leaves, chopped
* 400g spaghetti
* 290g jar artichoke hearts, cut into bite size pieces
* handful freshly grated parmesan
* handful parsley, chopped

Method

1. Heat the olive oil in a large saucepan. Tip in the garlic and cook for 1 min until lightly coloured. Pour in the chopped tomatoes, then stir in the basil. Bring up to the boil, then turn down the heat and leave to gently simmer for 10 mins. Meanwhile, boil the spaghetti according to pack instructions.
2. Drain the spaghetti, reserving a little of the cooking water separately, then return to the pan. Add the artichokes to the tomato sauce until heated through, then pour it over the spaghetti. Stir in a little parmesan, most of the chopped parsley and a splash of the cooking water if the sauce looks dry. Serve immediately with the remaining parmesan and parsley sprinkled over.

    that looks great! we just had spaghetti the other day. the usual though… pinoy-style, sweet, with minced meat and hotdogs. i should try cooking meatless pasta sometime…

    That’s interesting. I love artichokes but i haven’t seen a lot of pasta recipes that feature articles. and not one that looks so easy. I am definately going to try this! :cool:

    we’ve gone artichokes crazy. The artichokes are looking so good this year for some reason and cheap too! My girls love ‘em. I’m sure this pasta dish will be a hit!

    it’s been long time i was not able to visit your kitchen :-) i think i’ll try your spag style with artichokes. ummmh. i never tried this style but i think i wud love it coz i like artichokes.
