Pork Spareribs

Date January 25, 2005

Tonight was one of those few nights that my husband chose to give me a hard time and not eat what I have planned for us. early this evening, he stubbornly asked for Erwten Soup (green pea soup) while I’ve already told him that I’m making one of his favorites. But noooooo, it has to be soup because it’s winter!

So I made him his soup from a pack! and I enjoyed eating my korean recipe based spareribs. Seated across me, I saw him looking at the spareribs while having his soup and when he couldn’t take it anymore, he took a couple of pieces, ha ha ha! ( Eh di laking sisi nya! )

Pork Spareribs with Beansprout/Paprika bedding

- 2 long slabs of spareribs
- bean sprouts
- *julienne red paprika (bell pepper)
- roasted sesame seeds
- young onion leaves
- 4 tbsp oil
- 2 tbsp water
- pepper and salt

for marinade - mix all
- 1 cup soya sauce
- 3 chopped garlic
- 2 tbsp brown sugar or honey
- a tbsp sesame oil

Cut the spare ribs to pieces, marinade in about 2 hours. In a heated pan with oil, place the ribs and water. Place the lid and let simmer, tossing occasionally…until they turn soft and brown. Take the ribs off the pan and set aside. In the same pan, toss in the paprika and cook for 2 mins. then toss in the beansprouts, after a minute or two, add slices of young onion leaves and roasted sesame seeds, season with pepper and salt.

Place the beansprout/paprika as bedding on your plate and ribs on top. Sprinkle with a bit of onion leaves and sesame seeds.

great with rice!

*long thin slices, learned fr. Stel!
