Peanut Satay Sauce

My online project kept me away from updating this blog. I am not happy about the fact that because I am maintaining 5 blogs, it’s inevitable the some of them will suffer, sigh* I also miss bloghopping food bloggers that are instrumental to my starting this. Ah, I wish there’s more than just 24 hours in a day.

Anyway, this update is about this satay sauce which I can say is truly delicious! I am not really a peanut-satay-sauce lover but my husband is, so such sauce is a standard when I make satay. Most of the time, I just bought concentrated paste and dissolve it. But this particular dinner, I was in the mood to make it, & of course I sought the help of one one my Thai cookbooks, ‘ A Passion For Thai Cooking ‘ written by Sompon Nabnian.

Simple ingredients that I followed and I’m glad I did…definitely made me a peanut sauce lover.

  • 500ml thick coconut milk
  • 30g red curry paste (commercial)
  • 1-2 tbsp fish sauce
  • 30 g sugar ( I used panucha which was way better)
  • 125 ground roasted peanuts

Put the coconut milk into a wok and bring to boil. Add the red curry paste and stir to combine. Add the fish sauce, sugar (or panucha) and peanuts, simmer for 15 minutes until the sauce thickens.

Great for chicken, beef, pork or goat satay.

    o yumm! I can’t wait until we can start grilling again. Satay will be on our first line up. I like satay only because of the sauce. Otherwise, i stick with our Filipino bbq :)

    uy, love ko ang peanut sauce specially with fresh spring rolls! :D matanong ko lang yung ingredients. 125 ground roasted peanuts…125grams ba ang ibig mong sabihin o 125 pcs. ng roasted peanuts? papabilangin ko na kasi ngayon si abby ng 125 pcs. ng mani kung sakali. hee hee. ay, pilosopa! mana sayo! nyahahaha! :) nakakagutom forever ang mga laman nitong food blog mo. hay. :)
