pasta bella

‘Pasta Bella’ was how I called it when I first tasted this pasta sauce in Salzburg (Austria) during a vacation. I really liked the sweetness of the sauce’s main ingredient which was the aubergine and the after taste of fresh basil in my mouth. So I’ve decided to make for myself this sauce which was pretty simple.

main ingredients: sundried tomatoes in olive oil, aubergine chunks and fresh slices of basil leaves

further I’ve used: chopped med. onion, chopped 2 cloves of garlic, 3 tbsp olive oil, pinch of sugar, tomato paste, 1-2 cups of boiling water, pepper and/or salt. I found a bag of mixed pasta: pasta all’uovo (egg pasta) , pasta verde (spinach) and winter squash (pasta arancione) …but of course any pasta will do

*cook the pasta according to the pack’s instruction, saute onion and garlic in olive oil followed by the slices of sundried tomatoes, tomato paste, water, let stand for few minutes and then toss in the aubergine. toss in some basil before turning the heat off , add pepper/salt to fit your taste.
I’ve sprinkled it with dutch young cheese before serving.

    yummee thess i can taste it :yummy from here…tonight pasta for us too but more kid-familiar and kid-friendly (if i don’t make i’ll be put in the time out chair:melodramatic)
