Khanom Sangkaya Fak Thong or Coconut Pudding

I guess this was one coconut dessert that I really love. Not just the coconut pudding that you can eat but also the steamed pumpkin that was used to house the pudding. Glorious dessert!

This was steamed for an hour. And this wasn’t prepared by me but by the Sofitel Hotel (HuaHin Thailand) Thai chef who accommodated us during the Thai cooking class I participated in last year.

Ingredients for 4 persons:

1 small pumpkin

1/2 cup palm sugar

3 eggs

300g coconut milk

pinch of salt

Method:

Heat coconut milk with palm sugar and slat until sugar is dissolved, not letting it boil. Remove from heat and mix in the eggs. Pour the mixture in a de-seeded pumpkin and steam for an hour.

Delicious even if eaten while slightly warm.

There are many available online stores that people are becoming more and more dependent to online purchasing. Because it’s a lot easier, relaxed and really stress free. Even during the crazy holidays seasons, some people actually prefer online shopping than fighting huge crowd in any malls. Online shopping doesn’t restrict solely on fashion such as clothes, shoes, bags, electronic apparels, etc, but these days even food and health products are being sold online. But this isn’t about health product endorsement. Just stating the possibilities of online purchasing.
I guess once a buyer had a good buying experience from an online store, just like a walk in store, a buyer will keep on coming back, and do their business with their trusted store. Amazon is one known place where people can purchase anything , just about anything under the sun. From books, to baby goods, home and garden, sports goods, digital and electronic goods, grocery, shoes, pet supplies, jewelry or health and beauty goods. There are even available QRay - Amazon, those bracelets that even though some people are skeptic about, some also sworn how it works for them. Anyway, to each his own right. simple tuna steak salad

This I made during an attempt to eat ‘healthy’ . Like I said on my previous entry, I have been eating loads of junk food lately that I really should focus on preparing food such as this. Once in a while I do get this urge to make something good for the body such as salad. Because my husband hates fresh salad that’s why I seldom make it. And when I make it, I have to mix it with something he’ll eat..that’s why sauce is very important. He’d only eat salad with mayonnaise based sauce . So I made this simple honey mustard mayonnaise sauce. I just really throw in every ingredient I thought of to make this one.

I bought about 1lb of lovely fresh tuna at the market last week which doesn’t happen often. That’s because they do not have them fresh all the time, mostly frozen. So I jumped at the chance and bought a piece and this really turned out well.

The tuna was sliced about 3/4 inch per piece, peppered on both side then quickly cooked in a skillet with olive oil. I immediately turn the first side once it turned light brown. I made sure not to cook it through so that the middle remains still pinkish and soft.

I de-seeded a couple of tomatoes then sliced them into bite size, sliced some onions, gathered some thyme leaves, greens for the salad and alfalfa was placed on top of each steak upon serving. I was happy that my husband liked it. My father in law enjoyed it too. I guess if you have difficulty feeding someone with fresh salad, this might not be such a bad idea.

I should be cooking more

Lately I have not really been cooking. Simply because my husband and I always seem to choose bread and cold cuts both for lunch and dinner. At the end of the day especially when we are both tired from work, bread is always an easy choice. But I have a secret that my husband musn’t find out. well, now he will since he reads my blogs. My dark secret is that I have loads of junk food in my office that I stuff my face with it every single day. I love chips. All flavors that I can find in the grocery I have tried. And I also have boxes of chocolates in every drawer at home. I know what you must be thinking…
But I just can’t stay away from junk food, been my biggest problem even during those times when I was supposed to be dieting. That’s why diet never works for me. I even have a friend from years back who always said that junk food makes you loss your hair. I guess if she’d give me that line then I can answer that there are Hair Loss Meds available out there.
But I really really hope that I can stay away from all those junk food that I see each time I do my grocery buying. And I should pick up cooking more.

over a cup of coffee

Morning is the only time in a day when my husband and I can sit down before starting our work to converse about the latest current events over our cups of coffee. This is also the favorite time of our dog because he gets morning attention and be with us or rather silently sitting on my husband’s lap which is the dog’s morning ritual. This morning’s topic was about tax. A topic which I hate because this land where we’re living is such an ‘expert’ on coming up with all types of stupid tax to burden on its citizens.

Have you ever heard of tax over tax? This country specializes in that! Shall I give you a sample then? Let’s say you want to buy milk. You would think that you’re paying already for the value added tax of 19% which is included in the price…yes that’s 19%! Of course you do. But see, you still have to pay for the bottle or carton where the milk is packed and that is extra 2% tax. And what about benzine or diesel, we pay 80% tax for every liter! When it comes to tax I can go on and on but I can feel my blood starting to boil now so I might as well stop. I just wish I any of those international tax strategy is available here to combat this tax loving country.

Recipe for Roasted white fish wrapped in bacon with lemon mayonnaise sauce

Dear Ms. Helen Estrellado, Leng, JMoM and Girlie, my apology for the recipe delayed. Like I explained on my previous entry, blogging was the last thing in my mind the past days because of a death in the family. But I am back and I hope you like this fish recipe.

Serves 4

  • 4x 200g/ 7oz white fish fillets, cut 2.5 cm/ 1inch thick
  • 2 sprigs fresh rosemary, leaves picked and chopped finely
  • zest and juice of lemons
  • ground black pepper
  • 16 rashers of thinly sliced smoked streaky bacon or pancetta
  • 6 tbsp mayonnaise ( I used commercial)
  • string beans
  • olive oil

Method: Preheat the oven to 200C. Season the fish fillets with the rosemary, finely grated lemon zest, bee careful not to scrape the white part and pepper. Noticed that there was no salt on the ingredients, because the bacon will provide the saltness. Take a piece or two of bacon/pancetta, lay flat on a board then placed a fish on top and wrap them with bacon/pancetta. Do this to all fish pieces.

Lightly heat a large frying pan (better if you have an ovenproof one) , add a splash of olive and lay your fish. Fry for a minute per side then place the fish pieces to an ovenproof dish (or if you use an oven proof pan, no need to transfer the pieces ) place in the heated oven for 10-12 minutes…depends on the fish thickness, just until the bacon is crisp and golden.

Place the mayonnaise in a bowl and squeeze in some lemon juice. Add pepper. While doing this, taste your sauce until you achieve your taste. Set aside. In a pan with boiling water, quickly blanch the beans and then transfer to a bowl of iced water to stop them from cooking. Drain then set aside.

The original recipe of Jamie Oliver was with asparagus but since it wasn’t in season, I used beans. But if you can find asparagus, you can either boil or steam them.

Dutch Patat II

Here’s another fries sauce that is popular around here, and also happens to be my husband’s favorite. Patat met pindasaus. That’s fries with peanut sauce.

In the beginning I found it a bit revolting because of the color and the thought of peanut on fries. But guess what? I think now, it’s one smart sauce to pair with fries! It actually is very nice that’s why I can’t blame my husband always ordering it every chance he gets when we’d get a quick bite.

Dutch patat

We always buy patat from Bram Ladage, a well known patat stall which can be found all over Holland. Their fries are baked in pure liquid vegetable soya oil. Their campaign says that it’s the healthier way to have your fries. Would you try this sauce with your fries?

Anyway, I would just like to include this following link cosmetic dentistry..I thought I just do this favor for a friend. It has nothing to do with the fries.
