Lasang Pinoy 2 : Stormy Nilupak

I can’t recall much about a particular storm or typhoon (btw, why are most of them named after women?) event because so many of them hit the country (Philippines) every year that I’ve grown to accept typhoon season as part of ‘normal’ life. I think I’ll just talk about this snack that I strongly associate typhoon with .
I had this favorite mirienda (snack) when I was in grade school, I remember setting aside few cents from my pocket money for this. Most after school noons I’d either go to the market to buy this snack or wait for manang (an elderly woman) to pass by our street selling this, with a big bilao balancing on her head.

The bilao was covered with banana leaves, filled with warm mirienda known as Nilupak.
There was a time, I think I was about 9 or 10 years old then, when I couldnt wait for manang that I decided to go to the market instead to get my mirienda. It was really raining cats and dogs that day and the streets were flooded knee-high since our district was one of the lowest that time. I wasn’t scared because I was used to it. I took an umbrella and in tsinelas (rubber slippers) I was on my way. On the way to the market was a cross section where jeepneys were on route, it was always busy.

I was a thin child back then that I was sometimes called patpatin (like a stick.) When I reached the cross section waiting patiently by the stoplight to go to the opposite side, there were jeepneys flying above the water that I found myself losing my balance, drinking filthy water, umbrella was broken and lost a slipper which later on I saw floating on the other side of the street, but was afraid to retrieve it because of the rising water and waves caused by the jeepneys. Needless to say, I went back home crying ..not only because I was soaking wet, w/ one tsinelas on and a broken umbrella but most of all, without my mirienda.

For this month’s theme I tried my hands for the first time, on
Nilupak Cassava

(that’s my doggy/kitchen companion sometimes taster, Charlie)
Ingredients
3 kl cassava, 2 cans of condensed milk, 200 g grated coconut (i’ve used dried), 4 tbsp butter, melted
***peel and cut cassava into cubes, boil them until they become soft (not soggy). My sister suggested that I mash it manually but I used my kitchen machine to do the job for me. And it wasn’t a bad idea because it gave me just the texture that I wanted, smooth and makunat (sorry for the lack of translation there) After mashing, I transferred it in a deep pan, then added the milk, grated coconut and butter into mixture and this time mixed it by hand, until well blended. btw, I did my mixing on a very very low heat.
I think manang’s nilupak was a lot better than mine..maybe she had a secret ingredient? but I was sooo happy to have tasted it again after maybe, almost 20 years?

manang: ‘nilupaaakk, nilupaak kayo dyan!’
me: ‘manaaang! pabilan po, dagdagan nyo ha?’
manang: ‘dagdag kaagad, bayad muna!’
me: (bulong sa sarili:’ wag sabihan ng suplada, baka hindi dagdagan eh, ngiteee’ ) ‘bayad po, tenk yu manang’

pawis= paalat, oo nga ano?! :lol:…eh ano tawag dun sa ingredient ng mamang sorbetero na mag e -excuse saglit sa gilid ng pader tapos babalik sa sorbetes na inilalako nya kasi may batang bumibili ng sorbetes sa apa :icecream :raspberry

Hahaha!! I had to laugh at Charlie’s expressions! Ang kyut kyut nya !! :apple: Nakakagigil talaga! Hmmmp, lagot ka Charlie pagnagkita tayo baka malamog ka sa akin. Hehehe. :tongue
Really, is that how you do nilupak? I thought they have a special ingredient or tool to do it. Puede pala akong maggawa nyan! Thanks tita Thess for sharing and thanks for joining us in LP2.

Nice! I have never tried that, although I am a big fan of pinoy snack food/kakanin. I think they are something pretty special about our cuisine :yummy

ate, favorite ko din ang nilupak! hindi umabot yung entry ko sa lasang pinoy, kasi la ko makitang magandang picture na isasama sana.. tapos magulo nga isip ko a few weeks ago di ko tuloy maayos ung isusulat ko. sana next time makasali ako! :wave

At the end of the block of my shop’s location is a Filipino food store that sells everyday ulam and when we get really busy at our shop we just cross-over and shop there. As I said, their ulam is not special and my assistant and I critique it while having our lunch. We wonder where they learned to cook and we joke it must have been from MCI (Mindoro Culinary Institute) because they are from those parts. Their nilupak though is trully special.

thess, tapos na lasang pinoy 3 ngayon lang ako napasyal sa lasang pinoy 2 entry mo! nilupak is one of my father’s favorites — we had a bayuhan at home while i was growing up. saan ka ba sa pinas?

hinanahap ko yung post mo about fresh lumpia na secret recipe ng friend mo,..nawawala ata?…Ang nakita ko ay ibang post, which I would also want to try kung talagang wala na yung sa friend mo. Anyway, iniisa-isa ko months of postings mo, tapos nakita ko tong nilupak…favorite merienda ko rin yan nung nagtatrabaho ako sa clinic malapit sa palengke. Kulay ube at dila, tapos pahiran ng margarine…sarap!
