Neua Tun or Braised Beef Soup Recipe and etc.

Date December 9, 2007

I still have the flu & not been feeling well the past days, and only have checked my other 2 blogs so that’s the reason for this delayed response. Dear Jane, TulipFleurs and Lin, I hope you enjoy this recipe as much as I did.

Neua Tun or Braised Beef Soup good for 2-4 persons

  • 750 gr beef shank, sliced into bite size
  • lettuce leaves
  • bean sprouts
  • 1 piece galangal, about 1/2 inch length
  • crushed (chopped) coriander root
  • 1 cinnamon stick, about 1 inch long
  • 1 star anise (note: I have added this, this wasn’t included in the recipe book)
  • 1/2 tsp black pepper
  • 1pc bay leaf
  • 3 tbsp light soya sauce
  • 2 tbsp dark soya sauce
  • 1/4 tsp salt
  • 1 liter water
  • a pinch of dried chili powder

NOTE: adjust all the liquid ingredients during the cooking time.

Put all the spices and seasonings into a pot. Follow with beef and water. Bring to a boil over medium heat, cover and simmer for 50 minutes or until the beef is tender. Blanch the bean sprouts, set aside. Cut the lettuce leaves and arrange at the bottom of the bowl, pour the soup and beef, followed by bean sprouts. For extra, sprinkle some chopped coriander leaves and fried garlic.

Enjoy your soup!

Thess . . . I’m sorry to hear that you’re still not feeling too well. If only malapit tayo, I would have brought you over some aroz caldo . . . home made pa. ;-) Luckily that’s one “dish” I’ve somewhat “mastered.” Ha! Ha! If not, I could have brought you some war wonton soup from Chinatown. Well, thanks for posting the recipe, and try to get some rest this weekend. Easy lang, ha! ;-)
