Hot pork curry with pumpkin

I know that you can’t distinguish the slices of pork from the slices of pumpkin but they are both there *lol*  I have to admit that I made the sauce too thick - see that oil? most of it was from the coconut milk. This simple recipe was found from one of my Thai cookbooks.  Handy whenever I couldn’t come up of something for dinner.

What  you need:

  • 1 tbsp oil
  • 1-2 tbsp red curry paste (commercial)
  • 500g lean pork but into bite size
  • 1 cup coconut milk
  • 1/2 cup water
  • 350g butternut squash, cute into bite size
  •  kaffir lime leaves, 6
  • 1/4 cup coconut cream (thicker than the first)
  • 1tbsp fish sauce
  • 1 tbsp brown sugar
  • for extra thin sliced red chilies

Heat the oil in a wok, add curry paste and stir for about a minute. Add pork and stir fry over medium-high heat until golden brown. Add coconut milk, water, pumpkin and kaffir leaves, reduce heat to low  leaves and simmer for 5-10 minutes. This really depends on the pork cut that you will be using so I suggest not to leave it while simmering, try to find out if your pork is  cooking well. Lean pork is quite easy to over cook resulting to hardening of the meat. According to the book, the coconut cream is the last to be added but I also added it together with the milk (multi tasking that’s why) but if you want a thinner sauce, add the cream after about 5 minutes (after adding the last batch of ingredients.)

Add fish sauce to taste.  And don’t forget that steamed  jasmine rice!!
