EZ chicken marylands

Early spring time this year, all I could talk about was having barbeque nights in our garden this summer. Unfortunately, we’ve been having a wet, most of the time gloomy and cold summer so far and all I’m left with is dreaming of bbq.

So I had to content myself in using the oven, handy little thing. This simple chicken recipe is what I came up with when one day I so longed to barbeque but it rained instead. But to be honest, the chicken didn’t turned out bad. In fact, I think I liked it better oven grilled than barbequed.

Ingredients:
6 chicken marylands
4 cloves garlic, chopped
1 tsp coriander root, chopped
1/2 tsp finely chopped ginger
1 tsp chopped chilli or 3 tbsp commercial sweet chilli sauce
1 tbsp caster sugar
1/2 tsp ground black pepper
1/2 tsp salt
1 tsp chopped coriander leaves (optional)

**Score the chicken’s skin on both sides to allow the marinade to penetrate the meat. Mix all the ingredients and allow to marinade for 4-6 hours..or even longer, just be sure to keep it cold. Place in a pre heated oven of 200C for 40-50 minutes. Since the skin is scored you can easily check if inside is white and thoroughly cooked.
