Easy crab fix

It supposed to be summer around here (Holland) BUT as of this writing, my husband and I are both wearing pullovers because for the past days, it’s been raining and temperature has dropped. Outside, it’s gray as well…really depressing weather. But what else can we do? we can’t fight mother nature, can we?

To console ourselves, I thought of making an easy crab curry . No wonder we’re gaining so much weight, we’re consoling ourselves with food far too often! (I can see you dear readers rolling your eyes and saying: sure, blame it on the weather *lol!)

Anyhow, this was my easy crab fix:

Ingredients:

  • 1 can of coconut milk
  • crabs, 1 big or 2 medium pieces
  • 1-2 tbsp Thai red curry (I used commercial)
  • 100g julienned bamboo shoot
  • sliced medium onion
  • slices of green paprika
  • fish sauce
  • pinch of sugar
  • 2 tbsp oil

In a heated wok or pan with oil, saute red curry paste for about a minute or two, then add about 70% of coconut milk. Let it boil for 2-3 minutes then throw in the crab pieces and fry for 3-4 minutes.Throw in the rest (except sugar) of the ingredients while lowering the fire to slow heat, gently simmering. Taste the sauce, add fish sauce if you must and before turning the heat off, mix in the pinch of sugar.

Truly that simple…and made us forget the gray sky outside.
