Fried rice with salmon and tuna bits

Here's another very simple fried rice flavor I made few weeks ago. I had extra slices of fresh salmon and tuna, cooked rice from the night before and with one look at my husband's hungry face I immediately , rather automatically, reached out for the wok! Squash in coconut creme

The moment I saw this slice of squash at a local Asian store last week, an idea, a simple idea of cooking it quickly came to mind, so full of excitement I bought it. Yeah, excited because it isn't every day that you can find such beautiful squash in the smack of winter here in Holland! As much as possible I prepare our meals from scratch. Because that's what I grew up with. Fresh ingredients = better tasting food. Rice noodles with spicy tamarind sauce

The mood to experiment kicked in and this was the result. I should say that the idea wasn't totally mine as I took a big part of it from Pad Thai recipe (Thai fried noodles) but this was much simplified, easyier to prepare and if I might add, husband loved it!
