Egg noodles with orange- ginger dressing
I love noodles! Warm, cold, in soup – give it to me I’ll have it anytime!
This noodle recipe became a favorite of my little family. I think this was because of the dressing, which I adapted from Bill Granger’s ‘Relax’ recipe book. It was different from fried egg noodles I was used to or the Pinoy mami soup type. This can be eaten warm or cold (as salad) and pretty simple to make. A nice noodle recipe for a change, thanks Bill Granger!
Ingredients good for two persons:
- 250g egg noodles
- 300g chicken fillet
- 100g prawns
- 2-3 tbsp slices of leeks
- 1tsp roasted sesame seeds
- 1tsp chopped chili (optional)
for the dressing:
- 2tbsp orange juice (freshly squeezed)
- 2tbsp mirin
- 2tbsp light soya sauce
- 1 tsp grated ginger
- 1tsp sesame oil
- 2tbsp cooking oil
Prepare the noodles according to package, set aside. In a wok over medium fire, fry chicken cuts in oil stirring constantly for about 4 minutes then add prawns, continue stirring. When prawns are cooked through turn off fire then add noodles, leeks, sesame seeds and leeks- stir well. If you want to serve it immediately, mix in the dressing by adding slowly, tasting in between. Remember to adjust the liquid according to your taste. If you want to serve it cold, prepare the noodlemix an hour in advance and just add the dressing when you’re about to serve.
