Simple but tasty, that’s why I made this chicken burger twice last week. I was kind of not really in the mood to cook lately and have been looking for easy recipes. I’m glad my husband liked this and it was because of him we had it twice in the same week.

recipe yields for 4 persons

Ingredients:

• 700g kilo chicken breast fillet, free of fat
• 1 large onion, chopped
• 1 tsp garlic powder
• 1/4 tsp paprika powder
• breadcrumbs
• pepper and salt
• oil for frying

for garnish:

• sliced tomatoes
• sliced pickled baby cucumber
• mix of salad (mine was with julienned carrots, lettuce, raisins and mayonnaise)

Chicken fillet was pulsed in kitchen machine, transferred to a deep bowl all ingredients except oil and breadcrumbs were added. Mix well. Wet both hands with water or smear with small amount of oil to avoid the mixture sticking to your skin. Take anough mixture on both hands-just enough to make a ball which then flattened. Dip in breadcrumbs. Fry in a nonstick pan with oil (medium fire) .  Careful not to raise the fire too hot otherwise you’ll be having the outside dark while the inside is still uncooked.

Use any bun of your choice. Instead of smearing my bun with mayonnaise, I instead mixed it with my salad and served on the side.

If I may say so…not bad!

Manila Bulletin: If your blog was a kind of food, what would it be?
Me: That’ll be Pad Thai (Thai fried noodles)

- that was my answer when interviewed together with other foodbloggers back in 2005 by Ajay for Manila Bulletin. And that would still be my answer if asked again. Because I love love love pad thai.

My affair with pad thai all began back in 2003 when I worked for Sofitel Hotel (Hua Hin, Thailand.) During night offs, instead of eating (for free) in the hotel’s  restaurants (I was allowed to 2 of the 3 they have) I would go to the night market instead and satisfy my belly with padthai. Especially cooked by this Thai lady..

For me her pad thai tastes a lot nicer than prepared by hotel’s chef! It’s fun watching her with her serious face cooking noodles for her patrons. And even nicer to see her husband helping out. In 2003 her padthai cost 15baht. In 2007 (when this photos were taken) it was 25baht. Still a whole lot cheaper than in so called Thai restaurants here in Holland (where I am yet to taste an authentic serving).. a plate costs around € 8,00 (that’s 360 baht converted) can you imagine that?

No wonder whenever we’re in Thailand, my husband’s looking forward to me bringing him to the market where we would eat to our hearts content! And I’d even pick the tab! *lol*  I love hearing my husband’s “hmmmm, this is so good” between munches.

I sometimes order mussels to go with my noodles….ah I am salivating for some right now!

Only it was a disappointment last year when we went to the market hoping to once again taste this lady’s padthai. Her stall was nowhere to be found, which really left us disappointed. Husband and I still had our dinner at the market that night, but it wasn’t complete without padthai. Her padthai.
