Rice noodles with spicy tamarind sauce
The mood to experiment kicked in and this was the result. I should say that the idea wasn’t totally mine as I took a big part of it from Pad Thai recipe (Thai fried noodles) but this was much simplified, easyier to prepare and if I might add, husband loved it!
Few weeks ago I bought a small jar of tamarind sauce at the Thai store and I really wanted to use it. Since I have a bag of flat noodles, I decided to make this and see how it would taste. Not bad, not bad at all.
Ingredients:
- 1 heaped tsp tamarind sauce
- 300 g chicken fillet, sliced into bite size
- roasted peanuts
- 400 g flat rice noodles, cooked according to package, drained
- omelet, cut or sliced to pieces
- pinch of sugar
- 3 tsp sweet chili sauce
- fish sauce to taste
- 2 tbsp light soya sauce
- fried Thai garlic, 1 tbsp
- oil for cooking
Heat the wok with oil, throw in chicken fillet and stir until light brown. Add noodles, liquid and garlic, continue to stir until all noodles are covered with sauce, well mixed. Add sugar and If you want, fish sauce to taste. Just adjust the liquid to your taste, really.
To serve, place some omelet and peanuts on top….eet smakelijk!
