Prawn Croustade

I was supposed to post an entry for Lasang Pinoy, Rice is the theme this time. Unfortunately, my laptop where all the photos are in, malfunctioned and wont start anymore. There’s no way I can retrieve them so instead I will just continue posting my Christmas spread, and for this entry, my second entree (remember the first one was Gordon Ramsay’s Langoustine Cocktail.)

This recipe I have taken from a tiny French cookbook I bought 7 years ago. This required diagonally sliced of bread (triangle in shape) where the center is scooped out taking care to leave a base such in the picture.

What you need:

  • loaf of bread
  • 1/2 cup olive oil
  • 1 clove garlic, crushed

For the Filling:

  • 500 g small prawns (I used dutch rose prawns)
  • 1 1/2 cups water
  • 1 lemon
  • 50g butter
  • 2 slices lemon
  • spring onions, few stalks
  • 3 tbsp flour
  • ground pepper
  • 1 tbsp lemon juice
  • 1 tbsp dill
  • 1/4 cup creme (creme fraiche was what I used)
  • 1/2 glass dry white wine (or less)

Heat oil and garlic in a pan (low fire) brush all bread case with the oil, bake for 10 minutes.

To make filling: shell and devein prawns and chop roughly. In my case my were already small so there was no need to chop them. Place in a small pan and cover with water. Add lemon slices, simmer 15 mins. strain and reserve liquids. Heat butter in a small pan, cook chopped spring onions until soft, add flour and pepper. Stir over low heat for 2 mins. Stir constantly over medium heat until sauce slowly boils and thickens. Add lemon juice, dill, cream, and prawns and heat gently for 2-3 min. To serve simply spoon filling into cavity, garnish with chopped dill and spring onions.

    Question, pag gourmet ba ate sadyang ganyan lang kaunti? why not sandamukal sa plato para sulit? if ever i will go abraod, I will teach my self to cook so that I can eat as many food as I want. Mukhang bitin sa gourmet restos eh haha.
