Son in law eggs
When I first saw the dish’s name (from one of my Thai cookbooks) I had to re-read and re-read it. I really had to be careful not to misplace the letter ‘s‘ on the entry title.
Another easy to prepare (side) dish which I think your palate would find interesting. Its sauce I think, is simple yet unique. If you have already eaten few eggs prior to reading this then plan to immediately prepare it..I say why not wait for a week or two…we do not want ‘em cholesterol bugging yah (if yours is high.)
Son In Law Eggs

Serves 8
- 8 boiled eggs, peeled
- 2 tbsp palm sugar
- 2 tsp oil
- 1 tbsp fish sauce
- 2 tbsp tamarind puree (commercial)
- 1 tsp chopped red chillies (optional)
- fresh coriander for garnishing, chopped
Heat the oil in a wok or frying pan. Add the eggs to the wok in batches and turn frequently over medium heat. When they are golden brown and blistered ( as you can see, my eggs weren’t..I chose them not to blister, I kinda like them still soft on some parts) remove from the wok, set aside and keep warm. Remove excess oil from the pan then add brown sugar, fish sauce, tamarind puree and chillies. Bring to boil rapidly for 2 minutes or until mixture resembles a syrup. Serve eggs with syrup poured over, sprinkled with leaves.

note: I doubled my sauce’s portion, that’s why my eggs are kinda swimming in it.

I love boiled eggs, specially if they are free range from happy chickens
As far as I know, eggs are the most complete meal ever, well along with raw milk of course!
