tom kar kai (spicy chicken coconut soup)
Relentless winter! That’s what we’re having. I say enough!
But who am I to argue with mother nature, right? All I could do is wait (impatiently) ’til she decides to once again give birth to spring.
In the meantime, bodies are soothed these days with soup soup soup. Especially the (bit) spicy ones like my long time favorite,
Tom Kar Kai or spicy chicken coconut soup, sure helps break out some forehead sweat.

Ingredients for 2 persons:
2 cups coconut milk
3 dried kaffir lime leaves
1 inch fresh galangal, sliced thinly
1tbsp lemon juice
2 tbsp fish sauce
1tsp sugar
1 tsp sliced chili or 1-2 tbsp red curry pasta (if you use the latter, go easy on your fish sauce)
2 stalks lemon grass, sliced into 1 inch-pieces
350g chicken breast fillet, cut into bitesize
100 g champignons I’ve used our local kastanjeboleet which is brown in color
coriander leaves
- in a saucepan, bring coconut milk to boil. add kaffir leaves, galangal, lemon juice, fish sauce, lemon grass and chili (or red curry pasta) let simmer for about 5 minutes. add chicken and champignons, simmer for another 5 minutes. taste to see if extra lime juice, fish sauce and sugar is needed. if soup is too thick, simply add more coconut milk or water. before turning the heat off, mix in a bit of coriander leaves.
before serving, top with coriander leaves. Eet se!

Kumusta ka na? I made Halang-Halang the other day it is similar to this dish I think- but it’s really good especially with a different variety of chicken coconut soup yummy!

i think i will use wild spinach to replace chili leaves
