fish cakes (tod man pla)

I was salivating for fishcakes the other day. There is no thai restaurant nearby, and the lone filipino restaurant that serves such cakes is in the city (a bit expensive for a 4-piece-per-serving, I guess this was the reason that put me off) …I decided to take out one of my 2 old thai cookbooks and tried its fishcake recipe, my first time to make them.
The book has instructed the use of a food processor to make the patties which isn’t a bad idea, but I think I’ll chop/mix the ingredients manually the next time I make these cakes as I wasn’t very satisfied with the processed mixture which came out too smooth. I would love to taste pieces of fish the next time.

Ingredients:

500g white fish fillet (i used cod)

3 tbsp cornflour

1 tbsp fish sauce

1 egg

1/2 cup coriander leaves

2 spring onion stalks, finely chopped

2 tsp red curry paste (i’ve used commercial)

1-2 red chilis (optional)

100 g beans finely sliced

oil for frying

In a food processor place the fish, flour, fish sauce, egg, coriander, curry paste and chilis for few seconds or enough to get a cakey consistency. Transfer then to a bowl, mix in the chopped beans and spring onion. With clean hands both damp, form rounded patties then flatten them..size is up to you. In a frying pan, with oil over medium heat, fry the patties until they turn golden brown on both sides. Place a kitchen paper on a plate and let the cakes drain on top.
I served them with jasmine rice and for the dip, I used sweet chili sauce.

    i just flake mine but its been a while di ako naka gawa nito.
    maka gawa nga.. i just bought mackarel its 7 euro a kilo medyo mahal isda kasi LENT… hay i just ate skyflakes with butter dip sa tsokolate

    favorite namin ni mr. T. ito thessiree…i think i will make some soon. hey mackerel why not ha sha?
    we use a bit of shrimp, and finely sliced sitaw… but mr. T doesn’t like when i flavor it with wild lime leaves and absolutely no cilantro daw wah.
    yes i agree the food processor makes it too smooth, maybe just pulse it next time so you’ll still have chunks of fish to bite.

    STEL: Mr. T reminds of this girl I used to work with in Thailand, when we’re ordering food she’d always say: “Phi phi, patchi mei au” (kuya or ate, ayaw ko ng coriander) …just the smell of the leaves made her puke!
