Chocolate Ameretti Cheesecake.
Chocolade Amarreti Cheesecake met een schepje stratiatelli ijs / Chocolate Amarreti Cheesecake with a scoop of stratiatelli icecream
This I’ve learned from one of those british cooks at Ready, Steady Cook.
Ingredients
- roughly crushed amerreti biscuits ( or any bitter crunchy biscuits)
- roasted sliced almonds or hazel nuts
- mascarpone cheese
- whipped double creme
- dutch chocolate powder
- sugar
Procedure
Mix in powder chocolate in a pan with water and let it boil. Before it thickens, add sugar. Set aside.
Fold the cheese with creme and add crushed biscuits and nuts while folding. Add a bit of chocolate and gently fold, creating a ‘marble’ like look.
Get a plate and with a ring (smallest that you can get) placed on it’s center, put the cheese mixture and gently flatten it with the back of your spoon or the flat side of a knife or spatula. Torch the ring’s outside very quickly and gently raise it leaving the mixture in tact. Place a scoop of striatelli ice cream on top. Pour around the chocolate mix.
Serve immediately.
